A birthday gift for my kitchen....

I splurged on myself....I know, but I did not ask for any Brighton, I just wanted this pot to make fabulous meals in! Yes, a Le Creuset, the 4.5 French oven (dutch oven) but Le Creuset is French...so there you go!
Oh the soups and stews I will be able to master in this pot!

I bought it after taking the British class on making Beef and Ale pies. We used them in class and I just had to have one, plus I got 10% off that day on anything I bought. They are an investment but they will last a couple lifetimes, yes, you have to put them in your will because they will out last you!!

250.00.....ugh!!! But I came home and made my own pies with it!

I wanted to take this class after having eaten the pies in London last year, we ventured to the Sherlock Holmes Pub and they were so delicious!!

 and they hold 14 oz. perfect pot pie size!

Must have a six pack of Guinness, one goes in the pies and you must drink one while eating the pie, fabulous!

Fun, Fox and Fajitas!

As you know I am crocheting my little fingers off, it is so much fun!

I found this fabulous fox scarf pattern on Ravelry.com for 2.49 cents....I just had to make it!
When I showed my sister what I was going to make she said she really wanted one, her birthday is today and I just finished it, so I will be dropping it in the mail for her...Happy Birthday Christy!!


Oh the cuteness is overwhelming!!! I hope she enjoys him, he was so fun to make...I must get started on mine now!!

Here is a great recipe for you, Steak Fajitas! They were so good!




Here's the recipe:

Get some Flank steak, you can marinate it overnight or just an hour or two, the marinade is:
2 cloves garlic minced
juice of 2 limes
1/4 cup water
2 tablsp olive oil
1 tablsp soy sauce
1 tablsp worchestshire sauce
some cayenne and some salt and pepper (you decide how much, I did a couple shakes)
Put steak in a baggie and add ingredients, mix up and chill.

Next slice up 1 white onion, and 1 each of 3 colors of bell pepper, orange, red and green. You will need them cut into strips, fajita style. Put 2 tablsp olive oil in a hot cast iron skillet and add the onion and peppers, season with some salt and pepper, cook over medium heat until soft and carmelized, or to your liking. When done, transfer to a dish and keep warm, now get your skillet smoking hot and drop in the flank steak (discard the marinade). Cook steak a few minutes each side until desired doneness, remove and let sit for 10 minutes, then slice the meat into strips. Now you can add the meat and veggies back into the pan and reheat and mix all together, Serve on flour tortillas, with cilantro, cheese, avocado,  sour cream, lettuce, and salsa! MUY BIEN!!

How about a bowl of soup?

My hubby loves Broccoli cheese soup, so when a recipe for broccoli cheese soup came across pinterest, I decided to try it out. But then I read all kinds of recipes and kinda just threw the basics together and came up with this version....
Of course my stupid albertsons did not have bread bowls, UGH, I hate that store but it is at the corner of my block and I am fighting with getting over my cold and did not want to drive across town to another store.
So I grabbed the ingredients and a loaf of french bread and whipped up a pot of soup, OH MY, it was soooooo good! And I served it with hot french bread which made it even more scrumptious!

Give it a whirl on a winters night, you won't be disappointed!




Broccoli Cheese Soup:

INGREDIENTS:

    • 1 tablespoon melted butter
    • 1/2 medium chopped onion
    • 1/4 cup melted butter
    • 1/4 cup flour
    • 2 cups milk
    • 4 cups chicken stock or 1 32oz box
    • 3 cups fresh broccoli diced
    • 1 cup carrot, diced
    • 2 stalks celery diced
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon dry mustard
    • 2 cups grated sharp cheddar cheese
    • salt and pepper
    • crusty bread

Directions:

  1. Melt 1 tablespoon butter in a skillet over medium-high heat. Saute onion in hot butter until translucent, about 5 minutes. Set aside.
  2. Whisk 1/4 cup melted butter and flour together in a large saucepan over medium-low heat; cook until flour loses it's granular texture, adding 1 to 2 tablespoons of milk if necessary to keep the flour from burning, 3 to 4 minutes.
  3. Gradually pour milk into flour mixture while whisking constantly. Stir chicken stock into milk mixture.  Add broccoli, carrots, sauteed onion, and celery; and spices, simmer until vegetables are tender, I simmered for about 45 minutes, 
  4. Stir in cheddar cheese until cheese melts. Season with salt and pepper to taste.
  5. Serve in sourdough bread bowls, if you can find them at your store, top with some cheese and scallions. Or serve with french bread and butter!
  6. So warm and cozy and yummy!

AND I made another hat while I waited for my soup to cook! Well, it actually takes a couple days to finish a hat but I worked on it while the soup cooked!
It was made with Red Heart Waves Yarn, I loved the colors so I grabbed the yarn and made the slouchy beanie from the Red Heart website, it was easy and the wavy yarn makes the brim look all wavy and cool....Such a cute hat and soft and comfy too!!

Wintertime, soups and crafts...

Almost winter in the desert, the air is really cold and crisp, I am wearing my scarves and boots and sweaters. Making lots of soup and keeping busy in my craft room.
I wonder if we will get snow this year??? So Fun!
I love to make the copy cat version of Olive Gardens Minestrone soup, so good!


Ingredients
  • 3 tablespoons olive oil
  • 1 large onion chopped
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 cup fresh or frozen and thawed green beans
  • 1/2 cup zucchini, sliced
  • 4 cloves minced garlic
  • 4 cups vegetable broth
  • 2 cans (15-ounces) red kidney beans, drained
  • 2 cans (15-ounces) great northern or small white beans, drained
  • 1 (15-ounces) can tomatoes
  • 2 tablespoons minced parsley
  • 1/2 teaspoon dried oregano 
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 3 cups hot water
  • 4 cups fresh baby spinach
  • 1/2 cup small shell pasta

Instructions
  1. Measure olive oil into a large stock pot and heat on medium.
     
  2. Put the onion, celery, garlic, green beans, and zucchini into the pot and saute for about 5 minutes or until the onions become translucent.
     
  3. Add the vegetable broth, drained tomatoes, beans, carrots, hot water and spices to the pot.
     
  4. Bring to a boil and then reduce to a simmer for 20 minutes.
     
  5. Add the spinach leaves and the pasta and cook for an additional 20 minutes.
I usually serve with salad and garlic bread. Yummy!

Autumn calls for Peach Pie!

My neighbor, Wally, gave me some peaches, they looked like they had come from a gift basket, a real nice gift basket! 4 of them in a beautiful box. They were gorgeous peaches! I let them sit out for a couple days to ripen a bit more and then decided to make him and I our own little peach pies!

Wally lost his wife of over 50 years this summer, so we have been keeping an eye on him and making sure he is ok, and I have been sending over some home cooked meals once in awhile. He has daughters who come and visit but I still worry. I can't fathom losing my spouse after that many years together! Charlie and I are almost to 30 years married and morning coffee and Sunday naps sure would be missed without him!

But on to happier things, Wally is keeping busy and doing great according to him! So on to the peach pie...I went to you tube and my go to chef (chef John of FoodWishes) had the most amazing peach pie recipe. I chose to make mini versions since Charlie does not like peach pie, it would just be a pie for me and one for Wally.

You can search you tube for chef John at foodwishes, he has great recipes and I love the way he talks and teaches cooking.

But the quick version is this: Slice your peaches and add a sprinkle of salt and 1/2 cup of sugar, mix and let them sit for 1/2 hour, drain the juices only into a pan and cook it on medium until reduced to a thick syrup, set aside. To your peaches add some flour, sugar, a touch of cinnamon, a touch of cornstarch, and the cooked syrup you made, mix well and pour into crust filled pans. You can use homemade crust or pillsbury pie crust. Chef john shows you the easiest way to make lattice topping, My pies looked so wonderful!! But oh man, the flavor was over the top delicious, the secret is that little touch of syrup, I just know it!



I have a recipe for Lemon Chicken Romano to share but maybe another time, a cup of coffee and a slice of pie are calling to me!!

Happy Fall!!


As promised, I am back to post a soup recipe for the first day of Fall 2016!

You can always find my tried and true recipes over on the right column, just click posts that have recipes, I have clam chowder, cheeseburger soup, gazpacho, ham potato, plus plenty of other good things I have labeled as recipe posts.

So this soup recipe is for tomato basil soup, it goes great with grilled cheese sandwiches;

Enjoy!

  • 1 28 ounce can crushed tomatoes (Splurge on the best brand- San Marzano)

  • 1 11.5 ounce can tomato-vegetable juice cocktail : V-8 juice- I like the spicy!

  • 1 14.5 ounce can chicken broth

  • 10-15 fresh basil leaves, cut into thin strips, use to your liking I usually do 10 and taste, they can be powerful sometimes.

  • 1 cup heavy cream

  • 1/4 cup unsalted butter 

  • I know the butter and cream is a bit much, I like to think I am balancing that out because of the V-8 juice!


Directions:

  1. In a large saucepan, combine the tomatoes, vegetable juice, and chicken broth. Bring to a boil, and simmer for 30 minutes. Remove from heat, and stir in the basil. At this point, you may puree the soup if you wish. Add the cream and butter; return to medium-low heat, and stir until butter is melted. Serve with a Caesar salad or grilled cheese sandwiches!

First day of summer, time for soup???

My heaven here on earth, I will be playing here all summer!

Slicing and dicing is half the fun!

The liquid gold, so yummy, yummy, ENJOY!

My sister and I melded a few different recipes together to come up with this amazing COLD soup, if you have never had gazpacho in the summer, you truly have not lived a full life!

You must make up a batch ASAP! Start in the early morning, this soup needs time to come together and chill properly. It is a lot of chopping and dicing but in the end you will find the work is sooooo worth it!

Let's start off with HAPPY HALLELUJAH it is SUMMER!!! My favorite time of year, I am happy, I am glowing, I am living la vida loca!
Tank tops and flip flops and pool time and grilling goodies.....oh yes, I am in paradise.

OK, on to some chilling good soup!

We called this: TWO SISTERS GAZPACHO

You will need:
one large glass gallon jar

1 bottle 64 oz. spicy V8 juice
1 large English cucumber peeled and diced
1 regular cucumber peeled and diced
3 large garlic cloves minced
1 large jalapeno seeded and diced
1 red bell pepper seeded and diced
1 orange bell pepper seeded and diced
1/2 a red onion peeled and diced
3 vine ripe tomatoes diced
3 green onions diced
4 stalks celery diced
3 tablespoons cilantro chopped fine
juice of one lime
1/8 cup Worcestershire sauce
1/8 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon coarse black pepper
2 teaspoons kosher salt

Put all ingredients in the jar, stir to combine, and let chill in fridge for 3 hours or more. To serve, ladle into bowls and top with a dollop of sour cream, so refreshing and delicious!
Trust me, you will thank me for this summer time recipe!

Why am I not famous?

I have this knack for making things famous, all except for myself....
I started reading the Pioneer Woman's blog long before she had a tv show and pots and pans at Walmart. I also started watching Laura Vitales cooking videos long before she had a tv show and cookbook. Now these 2 are famous and making bucket loads of cash....jeepers.

They are still really great to get some tried and true recipes from so when I needed a good dinner idea I check them out on you tube.

I had some shrimp in the freezer and decided I needed a really good shrimp scampi recipe so a quick search on you tube and I found Laura's 10 minute scampi...oh, sounds perfect!

I rinsed the shrimp to thaw them and away we went.

This recipe is so flipping easy and so delicious! I am changing the recipe to make more sauce, you really want more sauce if you are serving with a loaf of french bread, Yum!

Get a pot of salted water boiling to make linguine and turn the oven on to 425*

1. Grab some shrimp (thaw if frozen or use fresh) to fit the bottom of a 9x12 baking dish in a flat layer.
2. Pour in a cup of wine (pinot gregio worked great)
3. Add 1/2 stick of melted unsalted butter
4. Pour in the juice of 2 lemons
5. Add 8 garlic cloves minced
6. Add some salt and pepper and red pepper flakes if you like a little kick.
Mix together and put in a 425* oven for 7 minutes for small shrimp or 10 minutes if using large shrimp. You can put a loaf of french bread in the oven too as it takes 10 minutes to heat as well.

Drop your linguine in the boiling water  to cook for 7 to 10 minutes.
I made my own fresh pasta earlier in the day, that was so much fun. I love to make pasta now and the take the time to make it from scratch, having the kitchen aid mixer with the pasta attachments helps, but I have heard by hand is fats and easy too!

Now that 10 minutes has gone by, take the bread and shrimp out of the oven, drain your pasta, add it to the shrimp dish, sprinkle on some fresh cut parsley, and give a good stir to coat pasta with the sauce, transfer to a deep serving platter so you don't keep cooking the shrimp in the hot baking dish,

Serve with the crusty french bread and butter, some Parmesan cheese and some more of that Pinot Gregio! Wow, fast and fabulous for sure!

I was so hungry that I forgot to grab my camera to take a picture of my dish, it was amazing we ate the whole plate, using the bread to mop up all the sauce! I will add a photo next week, I will be making this at least once a month!

Fun and Games and Soup!

That is the Las Vegas Strip as seen through the dust and wind!
It is spring here in the desert, the wind is blowing and my allergies and horrific. I may have to go get a shot to help me out. You can only blow your nose so many times before it falls off!

I am still trying to have fun though. My friend of 33 years, Debbie, came to town, we played bingo, I took a cooking class. We sat home and I cooked some fabulous meals. We played dominoes, yahtzee and scrabble, and drank bloody marys and margaritas, played more bingo and shopped at walmart, she loves the big walmart out here (she lives in a small town in California) so we go and she finds all kinds of cool stuff.
They gave out free chocolate bunnies that had prizes attached at bingo,
my little bunny gave me 10.00!!
I made us a ham dinner for Easter Sunday, I love ham and I really miss it, Hubby does not enjoy it so I don't cook it, but he actually liked the one I got, it was a spiral from walmart. Deb left the next morning so I dropped her at the airport and came home and made a nice pot of soup with the leftover ham, it was yummy! The wind was really blowing outside and it was so nice to have homemade soup to warm us up, and the hubby loved it too!

I changed the recipe slightly, I added 1 cup of chopped celery and omitted the corn. if you like you can add both or none...

Ham, Potato, Cheddar Soup

2 cups water
4 cups chopped potato, I used the yukon gold, they are so soft and buttery and you can leave the soft skin on. (yay, no peeling!)
1 cup chopped carrots
1 cup chopped celery
3 garlic cloves minced
1 teaspoon garlic salt/powder
2 cups chopped ham
2 cups milk
1/4 cup butter
1/4 cup cornstarch
2 cups shredded cheddar cheese
salt and pepper and crushed red pepper to taste

  1. In a large pot, bring water, potatoes, carrots, and garlic to a boil. Stir in salt, garlic salt, and pepper.
  2. Reduce heat, cover, and simmer for 8-10 minutes or until potatoes and carrots are tender. Add the ham. Reduce heat to lowest setting.
  3. Meanwhile, in a medium saucepan, melt the butter, then whisk in the cornstarch.
  4. Add the milk to the butter/cornstarch mixture and whisk together.
  5. Cook and stir until thickened and bubbly.
  6. Add cheddar cheese and stir until melted.
  7. Pour creamy contents of medium saucepan into the large pot of ham and vegetables. add some salt and pepper and some crushed red pepper if you like a little kick, bring back to a boil, then put on a simmer until ready to eat, I let it simmer for about an hour until dinner time. I then served with hot loaf of french bread from the oven and a salad.

Pizza Pizza!


Who knew making your own pizza at home was so easy and delicious! You need to start 2 hours ahead to let the dough rise but if you know it is pizza night just set a timer for 2 hours before time to eat!

I have been practicing and made 3 pizzas so far.
It is so much cheaper then delivery!
I made 3 - 14 inch pizzas with the 20 dollars we spend on one. We have a good italian place on the corner that we were getting our pizzas from, but the quality and taste has been declining lately, left me dreading getting a pizza from there, so I went on a search to make my own.

Here are the 4 things you need for good pizza at home:
15 inch pizza stone-I found one at albertsons for 12.99!
Dough-croutoncrackerjacks on you tube
Sauce-erikeats.com
Toppings-what ever you like on your pizza!

The dough recipe I found is so easy and makes a perfect 14 inch pizza:
2 cups all purpose flour
1 tsp salt
1 tsp active dry yeast
1 tblsp olive oil
3/4 cup 100* water
2 tblsp sugar

Put the sugar and warm water in your mixer bowl, stir, add yeast and leave it for 5 minutes. then add flour, salt, and oil, mix on low with dough hook for about 8 minutes, fold dough over on its self to make a nice round ball, place in a bowl with some olive oil smeared in it, roll the ball around to coat, cover with plastic wrap and place in oven (off) for 2 hours.

For the sauce:
1 can 28 oz good quality tomato sauce
1 can 6 oz tomato paste
1 tsp garlic powder
1 tsp salt
1 tsp italian seasoning blend
Mix until smooth, no cooking required, set aside to get the flavors to meld while your dough rises for 2 hours.

When ready to make your pizza, get your dough out of oven, place a pizza stone in your oven and turn to 450*
Shake some corn meal or semolina on your counter, start stretching the dough out to make a pizza crust, I watched many you tube videos on how to do this. Erikeats.com has a great video on this technique.

Get the hot stone out of oven and place your dough on top carefully, and start topping your pizza!

Make sure to buy good quality ingredients, get your cheese slices (more flavor then shredded) at the deli counter, same with the pepperoni, and 1/2 pound of thinly sliced mozzarella and provolone cost me 3.50 each and lasted for 3 pizzas! You can also top with bell pepper, mushroom, jalapenos, once you have your toppings on sprinkle parmesan all over the top and place in oven for about 10-15 minutes, keep an eye on it! Take out when you are happy with the color and let sit for 5-10 minutes, slice and enjoy the best pizza ever!

#51 and Blackened Fish Tacos

A little birthday advice:
I have learned that fish does not have to be fishy, and if you open your mind and try new things, you will find a whole new world out there to be discovered.

It took me a long time to get to this point, I did not start to cook like a real cook/chef until my forties, and now in my fifties, I am getting pretty good!

I also did not start to really travel until my 40's and now I have been to many countries and found I really enjoy travelling!

Never limit yourself. Keep learning and trying new things. Age is a number not a place. I keep taking classes to learn new things and I will continue until my 100's!

So on my 51st birthday I just wanted to give a little advice....Get out there and enjoy life! Do something you never done, try a new food, you may discover you really like it, like these:

Blackened fish tacos:

Tilapia about 5 fillets
1 teaspoon of each smoked paprika, garlic powder, oregano, onion powder, cumin, salt, brown sugar, cayenne pepper.
Place fish in a plastic bag and dump in the spices, mix and shake all around to coat the fish, put in fridge for an hour or 2.

12 corn tortillas (I now make my own and it is so fast and easy now)

Some veggie oil to fry up the fish, just enough to coat the grill pan or skillet, which ever you have.

For the taco lettuce:
1/2 head of lettuce or cabbage, we like lettuce in this family. slice into thins strips add 1/2 diced onion, 1/2 cup chopped cilantro, juice of 1 lime, mix all in a bowl and let marinate in fridge for an hour.

For the Sauce:
1/2 cup sour cream or mexican crema
1 ripe avocado
1/4 cup cilantro
juice of 1 lime
1 teaspoon salt
1 jalapeno chopped and seeded
Put all in a blender or food processor and blend to make a sauce.

When ready to eat, fry up your fish on a nery hot pan, I use a grill pan, let them get nice and blackened, about 4 minutes per side, they cook fast!
Then chop into bite size portions, heat tortillas on a grill or flat top.

To serve the tacos, place some fish in a tortilla add the lettuce mix, and some sauce on top, and some queso fresco shredded cheese (or jack cheese) amazing flavors and so delicious, my hubby devoured these! Sour cream, onion, cilantro, fish, and all!! We all know how picky he is and he loved these!!!

Mexican Street Tacos!


Mexican Street taco class was so much fun! 
We made our own corn tortillas, oh, that was fun and easy! We grilled them and ate them, and let me tell you, once you make your own it is very hard to eat the pre-made store tortillas again!

We also marinated some pork pieces and some shrimp, then we made a filling for veggie tacos for those who don't eat meat. The veggie taco filling was so delicious, I will be making it just as a topping for tacos, it was that good! It was charred pablano chiles mixed with grilled onions and corn and garlic, so delicious!

So here are the fillings we made:

Grilled Pork Tacos (Al Pastor)

Chipolte-lime Shrimp Tacos

Tacos de Rajas con Queso Fresco (charred pablano w/mexican cheese)

I just love these classes, it is getting me out of the house once a month and I am learning so many neat tips and tricks for cooking. I love to cook when I am stressed out, being in the kitchen and following a recipe is so therapeutic, and you get to eat wonderful homemade food which is always better than store bought food.

Happy Valentine's Day!

Normally we don't do V-Day, but I had this box of doughnut mix I bought from Sur La Table, and knowing my hubby loves doughnuts I made them special for him this morning!
He was so happy!
The mix is great, they give you the frosting mix too. I decided to leave some plain and put powdered sugar on some. Wow, they were so soft and moist, really good mix! Perfect for a special occasion like this! The doughnut pan is a Wilton pan, and the little signs were just from my scrapbooking stash.

Cooking classes

I am starting to take cooking classes at Sur La Table. I think I would like to take one a month if I can.
So far I took a tamale making class, it was good, but I have tried two times to make them at home and have failed, my masa is too wet. I will try again and see if I can master them!
My last class was a pasta making class, we made the pasta by hand and then used a hand crank to roll it out and the kitchenaid mixer too. I got the kitchenaid attachments for Christmas that make pasta rolling and cutting easy so that is the reason for a pasta making class.
Once you taste homemade pasta it is hard to go back to the cardboard tasting box stuff!
It is fun and easy to make pasta at home.

Here are the dishes we made in class:

Here I am making the sheets, just cut in large squares and add some tarragon and sandwich them, then cook them up!
