Chicken Scampi!

I would like to share one of my all time favorite recipes with you!
I love to make this dish, it is yummy and my favorite comfort food!
Enjoy!
My version, I like to flatten a chicken breast instead of chicken tenderloins.
Also I use angel hair pasta.

Olive Garden Chicken Scampi

You can prepare Olive Garden Chicken Scampi at home.

Ingredients

  • 1 pound chicken tenders
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil - divided use
  • 1/2 green bell pepper sliced thin
  • 1/2 red bell pepper sliced thin
  • 1/2 orange bell pepper sliced thin
  • 1/2 medium sized red onion sliced thin
  • 1 clove garlic sliced thin
  • 1 pound pasta cooked according to package directions
  • 3/4 cup white wine
  • 3/4 cup heavy cream
  • 1/4 teaspoon Italian seasonings

Instructions

Place flour, salt, and pepper into a shallow dish and mix well with a fork. Place milk in a shallow dish. Dredge chicken first in flour, then dip into milk, and then dredge again in the flour. Place breaded chicken on a rack and allow to rest 10 minutes before cooking. While the chicken is resting, cut peppers, onions, and garlic.
Saute peppers, onions, and garlic in a large heavy bottomed skillet over medium heat with 2 tablespoons of olive oil. Season peppers, onions, and garlic with a light spinkling of salt. Saute until peppers begin to brown. Remove from skillet.
Place remaining 2 tablespoons of olive oil in hot skillet. Place chicken in skillet. Cook for 5 to 7 minutes on each side until the chicken has browned on both sides. Remove chicken from pan. Deglaze the pan by adding white wine to the pan and add italian seasoning blend. Scrape the bottom with a spoon scrapping the browned bits off the bottom of the pan. Add heavy cream and mix well. Return cooked vegetables to the pan and stir. Add cooked pasta to the skillet. Plate the pasta and sauce, placing a few pieces of cooked chicken with each plate.

WHO KNEW???


We love to go to the beach for concerts, the Mandalay Bay Beach. Something about sitting with your feet in the cool water while the warm breezes blow by you, listening to some great music.

We ( Me and Tanya) have not seen a bad show here and we have seen plenty. From the GoGo's to Peter Frampton to Flock of Seagulls!! Most people think it is too hot and won't venture out here, but with the water and the cool breeze off the water and nighttime, most shows start at 8 or 9, it is the perfect weather!
We grab tickets to anything that shows up for this venue, we thought getting the Phillip Phillips tickets were going to be a dud, but we were there for the ambiance so, no worries....BOY, were we wrong! That guy rocked the place, he played a little Led Zeppelin, a little Peter Gabriel, jammed on the guitar, slowed down with some soulful blues. This guy is nothing like you saw on American Idol, he blew us away!
Go out and see him, buy his music, dude is pretty awesome! Rock on Phil, you have my vote!

Cowboy Up Baby!

I went with Tanya on Saturday night to the bull riding event at Mandalay Bay, I was buying dinner and we went to The Burger Bar in the shopping area of MB, it was fabulous, I tried a buffalo burger! Yum! Great place to eat if you are in town.
Then we headed to the bull riding, I was drinking crown and 7, so delicious!
I could have reached out and touched some cowboys we sat so close!
Yep, you marry a bull rider for that forearm!

Happy Mom's Day!

Got some beautiful flowers from my son and his wife for mom's day! Thank you!

I am going to try a new recipe today, we don't go out to eat on holidays, too crowded and over priced.
I like Laura Vitale's you tube cooking lessons, and it is real cooking, real food and is real good!
Plus she is fun and happy, I like fun and happy! Makes life a little more enjoyable!

Hot Patootie!

Well, that escalated quickly...I went from meatless to meatloaf!

Tuesday night, Tanya got us tickets to see Meatloaf's show at the Planet Hollywood.
Wow, we were in the fourth row! Me, Charlie, and Tanya!
Meatloaf is so dramatic when he sings and he puts his heart and soul into every performance.

Yeah, he may not be as strong and vocal as he use to be, but he gave us his all, and we loved it!
So much fun to see his role as Eddie in Rocky Horror play on the big screen while he sang along on stage, Well, we all were singing along, and then we did the time warp!! Wheeeeee!!
 

But my favorite was him singing Bat out of Hell, so dramatized with the big bat in the background and everyone singing along because you have to know all the words to Meat's songs, yes, when you meet him you call him , Meat, he told us we could!
He told a couple funny stories and sang till he could not sing anymore and we all went home, humming along to "I would do anything for love".  What great concert night, that was!

Meatless Dinner

I love to make these for dinner on nights that Charlie is at the races, I probably shared this before but I did not label it in my recipe category so I am repeating it tonight.

Black Bean Burgers with sautéed spinach


Very easy and makes you feel like you are eating healthy and good! I love these burgers! I don't put them on a bun, but you can, and add avocado, etc. I like them plain!

1 can of 15 oz black beans, I use the kind with jalapenos added, any kind will do.
1 cup of brown rice, cooked. I used a bag of minute rice and just used 1 cup of it.
some onion and red bell pepper chopped, as much as you like
couple cloves of garlic minced
cumin
paprika
salt and pepper
olive oil
couple tablespoons of flour

1/2 bag of fresh spinach

Put some olive oil in a pan, about 2 tablespoons, add onion and bell pepper, sauté about 5 minutes, then add garlic. Drain your beans and rinse, add to pan add your spices about a 2 teaspoons of each,  and cook about 10 minutes, then mash them with a potato masher, add cooked rice and stir. Dump on a plate and spread to cool. Once cool, grab a little flour in your hand and pat the mix into patties, this usually makes three good size burgers. Add a little olive oil to the pan and fry the burgers about 4 minutes per side until browned, set aside and add your spinach to the pan, sauté with some salt and pepper, this just takes about 3 minutes until wilted. Serve! Quick healthy dinner that tastes great! I can use the other two burgers for breakfast, will go great with a scrambled egg!

Vegas Day!

I needed to get out and practice with my camera before my big trip, so I met Tanya over at the cactus gardens by the Ethel M's chocolate factory, it is all free. You walk the gardens then go through the factory (it is really short) then they give you a piece of chocolate, dark or milk, I love a little dark chocolate, yum, then you walk out through the store, I bought the hubby some chocolate on the way out, some milk chocolate coins. It makes him happy.

The gardens were just beautiful and it was the perfect weather, a nice cool but sunny spring morning!
I am not much on naming everything, I like to just look and take pictures, if you go to Tanya's blog, Beadandneedle she has more pictures and info too, but if you just feel like looking at some pretty pictures, here you go, enjoy:
