The Derby King/Prince??

My son is a derby car driver, he got that trait from his father, Bill, he was the Derby King of Ascot Raceway in California years and years ago...so I guess that makes Travis the Derby Prince? Anyway, On New Years eve they had a Derby in Orange County, this is the car Travis built and drove, the paint job won him Best in Show! He finished 5th in the race due to getting stuck on another car and was unable to move any longer! I think it is so cool that he can go out and play and have fun crashing up cars, what a way to unwind after working all week! hahaha!!
The car!
The hood, too cute!

Chicken Chipolte Enchiladas

I made these enchiladas tonight, they were really good! The chipolte sauce gave them a great flavor, Charlie really enjoyed them and we will put this recipe in our favorites!

Chicken Chipolte Enchiladas (recipe modified from Lightened up enchiladas on Tastykitchen.com)

Ingredients

  • 2 Tablespoons Olive Oil
  • 1/4 diced onion
  • 2 cloves Fresh Garlic, Peeled And Minced
  • ¼ cups All-purpose Flour
  • 1 teaspoon Cumin
  • 1 7oz. can Chipotle Peppers In Adobo Sauce
  • 1-½ cup  Chicken Broth
  • ¼ cups Water
  • ¾ teaspoons Kosher Salt
  • ⅛ teaspoons Black Pepper
  • 2 whole Grilled Chicken Breasts, Shredded In A Large Bowl
  • 8 8 inch flour Tortillas
  • 2 cups Grated Jack Cheddar Cheese
  • Lettuce, sour cream, avocados

Lightly spray the bottom of a 13×9 baking dish and set aside. Preheat your oven to 400 F.
In a large skillet over medium heat add the two tablespoons of olive oil.
Add diced onion and cook, stirring occasionally,
Add in the minced garlic and cook for one minute. Add in the flour, cumin and the tablespoon of diced chipotle peppers, stir.
Whisk in the broth and water. Add in the tablespoon of adobo sauce if desired and simmer over medium heat until the sauce has thickened. Season with 3/4 teaspoon kosher salt and 1/4 teaspoon black pepper.
Put the shredded grilled chicken in a bowl. Add a couple spoons of  the “enchilada sauce” to the shredded chicken.
Spread some of the sauce in the bottom of the prepared pan.
Spoon a little of the sauce, chicken mixture, and cheese, down the center of each tortilla, then tuck and roll each tortilla and place it seam side down into the baking dish.
Pour and spread the remainder of the sauce over top of the enchiladas and top with rest of cheese.
Bake, uncovered, in your preheated 400 F oven for 15 minutes or until the cheese has melted and is bubbly.
Serve over shredded lettuce and top with chopped avocados and a spoonful of sour cream.
Fabulous dish!

Happy new year! 2013

Wow, 2013! Crazy!!

I hope this is a good year filled with fun and laughter and travel and love!
I was given many fun and wonderful gifts this year, one from my sister is this huge jim shore statue of an angel watching over cats, I really love it:
Mr. Big decided he likes laying up there!

My friends know how much I hate the cold and how I count down the days until summer, so Tanya actually sat down and knitted me a pair of socks!! How freaking cool is that, hand knitted socks, they are so warm and soft!! The sweater is a gift from Mary Nolan-Riegle, she lugged it all the way from Ireland just for me!!! I cannot tell you how special that sweater is to me and soooooo warm!! I like to wear it with jeans and my high brown boots!
Hope you got everything you wanted for Christmas!

Baby It's Cold Outside!

I stayed home saturday to get all my year end receipts in order, also cleaned house and put away the Christmas decorations. Charlie worked at the shop, so I made my own supper, I tried the Sherried tomato soup from pioneer woman. it was nice, nothing spectacular but with the temps being in the 30's here, soup was good! I also made her broiled French bread. It was good little supper!

Happy New Year!

Another Christmas come and gone... It was fun, I got a new car, wine cooler and lots of fun goodies from family and friends! I will showcase them on the blog every now and then. We drove to Christy's house in California where I got to see my son, Travis, and his wife Rebecca, Christy and Jeff and the little animal sanctuary they have.
Travis decided to grow a beard! He looks like a mountain man!
Everyone watching the dvd I made for christy and jeff, it was our cruise photos put to music!
I just fell in love with Helen (she is a blind cat) but she really is more fun and outgoing then most cats I know! Then there is Popeye (he has one eye) and Pearl (she has grain allergies) Sometimes I don't know how my sister does it, the care and commitment is overwhelming but she keeps on giving!
I snuck upstairs to snap a photo of 5 cats napping on the bed.

Popeye and Neuman enjoying the fire!
Hope everyone had a wonderful Christmas!

More Christmas Fun!

Charlie's car quit running and has been in the shop, needs a new motor. So while we wait, he has been driving my truck and we rented a small car for me to run around town in. It was a 2012 Toyota Corolla, boy, that was a fun little car to run around in, I drove it 12 days. We decided maybe it would be a good idea to lease a small car for me and park our truck due to the gas prices.

We went down and picked me up a brand new 2013 Toyota Corolla LE, I will have it 3 years then I will get a brand new car again, hey, this lease thing sure is a nice way to go! Plus, It is a huge write off on our business!
I just love the dark grey color and it has hands free/bluetooth for my iphone use! The only thing missing is my xmradio. But it is playing my library of songs from my iphone which is about 1500 songs!
My favorite part on the car is the gauge that tells me how many more miles I can drive before I need gas, when it is full I can go about 380 miles! I think I will have to buy gas every 3 weeks!!
Thanks again Honey, I just love my new car!!
