Comfort food!

As promised, and since we need a little comfort food right now...
The Fabulous Flexible Mac and Cheese dish!
Broccoli version, get your veggies in!


I like to use Bowtie (farfelle) or Wheels (ruote) for my mac and cheese or the good old Elbows!

Once you make m&c homemade, you can't go back to the box, just a warning, plus it is just as easy and you don't get all the chemicals! I slimmed down my friends version to make it easy and quick, she puts sour cream in hers! I know this has a can of soup but it just works so well...

What you need:
1 cup of pasta
1 1/2 cups sharp cheddar cheese
(grate your cheese, do not buy pre-grated stuff, it has added chemicals that do not melt well!)
1 can Campbell's cheddar cheese soup
1 can milk (regular whole milk just use the can to measure)
1 tablespoon dry mustard
Ground pepper and red pepper flakes if you like some kick!
No extra salt as we are using canned soup and we know that has tons of sodium!

Preheat oven to 375*
Boil a big pot of water, add the pasta, at this time you can throw in a bag of frozen broccoli or fresh chopped, yes, right in with the pasta! They will boil together in 10 minutes.
While pasta is cooking melt the cheese soup, cheese, milk together,
stir and simmer until thick and creamy.
After 10 minutes drain pasta/veggies, stir in the sauce, pour into casserole dish - at this time you could just eat it now, just get it nice and hot in the pan and then serve, or you can bake until bubbly and just starting to brown the edges, about 30 minutes.
Let set up about 10 minutes then serve, Delish!

This is flexible because you can add all kinds of things to this dish, I have sauteed roasted red peppers and added, I have added spinach, you can add just about anything you like, it always taste rich and creamy!

I have never tried it with the soup but will for sure give this a go!!! It looks absolutely wonderful friend and I am in desperate need of comfort food right now!!!
