Stormy Weather!

It rained really good yesterday, so I got to stay home inside all nice and cozy and cook!
I made the copy cat version of Olive Garden's Minestrone soup! It was soooooo good!

Here is the recipe I used:
Minestrone soup

3 tablespoons olive oil

1/4 of an onion chopped small

2 zucchinis chopped in chunks

3 stalks celery chopped small

1/2 bag of frozen green beans (italian style)

4 cloves garlic minced

2 boxes vegetable broth 32 oz each

2 cans kidney beans 15 oz each-drained

2 cans cannelloni beans 15 oz each-drained

1 can crushed tomatoes 28 oz

2 carrots chopped small

parsley-tblsp

oregano-teasp

salt and pepper

basil-teasp

thyme-teasp

1/2 bag chopped fresh spinach

1 cup small shell pasta

1/4 cup parmesan cheese grated

Some crushed red pepper if you like it spicy!

Heat oil in large soup pot, saute onion, celery, garlic, green beans, zucchini, carrots for about 10 minutes until all nice and hot.

Add broth, tomatoes, beans, pasta, spinach and spices and cheese.

Bring to a boil, then cover and simmer for an hour!

Delish!!
